mango cilantro braised leeks

 

ingredients: (yield = serves six)

• 12 leeks
• 1 teaspoon chopped garlic
• 1 teaspoon chopped parsley
• 1 teaspoon chopped thyme
• ½ cup white wine
• 2 tablespoon butter
• 2 cups stock
• 2 tablespoon mango cilantro chutney
• S&P

cooking directions:

Remove white area of leeks from top and bottom similar to how you would remove the bottom of any onion. Split in half and place in a bowl of water to remove any sand or grit. Remove from water and pat dry. In a large sauté pan, melt butter and add leeks flat side down, season and sauté until slightly browned, turn over and repeat process.

After leeks have browned slightly on both sides, add garlic and herbs and cook for an additional 5 minutes over low-medium heat. Deglaze pan with wine and allow liquid to simmer until almost completely dry. Add stock and cook until stock has simmered almost dry. Leeks should be soft and tender enough to cut with a fork.
