indian style waldorf salad


• 3 cups chopped unpeeled granny smith apples
• 1/2 cup chopped celery 1/2 cup golden raisins
• 1/4 cup minced red onion
• 1/4 cup lite mayonnaise
• 2 teaspoons lime juice
• 1/2 teaspoon curry powder
• 1/2 teaspoon ground ginger
• 1/4 cup chopped raw or toasted almonds
• 4 tbl spoons leon's mango mint chutney

cooking directions:

Toss the apples, celery, raisins and onion in a bowl. Combine the mayonnaise, lime juice, curry powder and ginger in a small bowl and mix well. Fold the mayonnaise mixture into the apple mixture. Chill, tightly covered, for 30 minutes to several hours. Stir in the almonds and chutney just before serving.
